About 4 years ago my husband and I spent a few weeks in India (mostly spending too much money and having issues with bank cards) and hubby got to try out the yummy sounding fruit lassi, where as I missed out. In more recent times I found a recipe for a mango lassi at the back of Vegan Brunch and figured here was my chance to make up for lost time. Coincidentally, Lily was going on about making smoothies today and so we tried making one for pudding after dinner. I started out intending to follow the recipe and then thought I would ad lib and go for a simple pared down smoothie instead!
200g frozen mango
250ml Alpro original soya milk (or other brand non-dairy milk)
250g (or half a tub) of Alpro Vanilla Soya Yogurt (or other brand non-dairy vanilla yogurt)
- Throw ingredients into blender
- Blend until smooth
- Pour into 2 glasses
Even though I used a vanilla yogurt, the smoothie wasn’t majorly sweet so feel free to taste and add a little sweetener of your choice.
