The Vegan Slow Cooker: Chick’n Cacciatore

Well today is my last official meal from the Vegan Slow Cooker and I chose to round things up with the Chick’n Cacciatore, which is a faux chicken in rich tomato sauce. I decided to serve it up with pasta. Apart from having to rush (again!) to get the seitan ready this morning, because I didn’t prepare it in advance, this dish was very straightforward. It turned out beautifully…

I’m a little bit paranoid about my serving sizes, as this was meant to make enough for four servings. I guess we didn’t have anything with it (I forgot to steam some vegetables-I am still suffering from baby brain!) and of course my toddler has a small portion as well, but even so, if I was to make this again I would double the ingredients to make enough to freeze. Talking of my toddler… Lily absolutely loved this meal, she is generally a big fan of pasta with tomato sauces, but she even gobbled up all the seitan, and asked for seconds. So absolute winner all round!

Although my week blogging about the Vegan Slow Cooker is over, I’m definitely not finished with this book. I’m currently stocking up my freezer with extra portions of meals and I’m planning on using several of the recipes for breakfasts, lunches as well as dinners over the next month. It’s also been really great to learn some new cooking techniques which could be adapted for different recipes. Thanks Kathy for your comments and useful help and advice.
